Tuna and Bell Pepper Pocket
3 small cans of solid white tuna (dipped in water), Â1/2 cup finely chopped bell peppers, Â1/4 cup chopped celery, Â1/4 cup sliced onions, 8-12 lettuce leaves (go for green and fresh). Now comes for 2 medium sized sliced tomatoes ( fresh and juicy), 3 heap of tbsp for fat free Italian dressing, 1 tbsp of dried oregano, turn it on the tuna mix and stir. Allow it to rest in refrigerator for few hours. The time you serve, top the bread with tomato slices, 2-3 lettuce leaves, and lastly add the tuna mix. The serving is enough for 4 people.

Smoked Chicken Sandwich
Â1/2 (8- bit) loaf sourdough bread Â1/4tbsp. vinegar 2 tbsp (can go for more). Finely chopped parsley 1/8 cup low fat mayonnaise or fat free salad dressing (ensures less calories), Â1/4 cup chopped bell peppers (good source of b complex). Â1/2 small onions finely sliced Â1/2 medium sized sliced tomatoes, 8 slices of mozzarella cheese. 2 cloves, mashed garlic, 8 slices of lean chicken 1 tbsp black pepper. Cutting of the loaves is preferred horizontally. Scoop up the bread from inside making it shell type. Mix mayonnaise and vinegar, add parsley bell peppers, black peppers, and garlic to the mix. Wait 15 minutes so that the mixture merges well. Then comes for the slice of chicken, layer them at the base of shell in the bread, and then with the cheese. Top it over with half of the onions and rest of the tomatoes, lastly cover it up with mayonnaise. Repeat this layer process until a big heap and envelop it with another shell of bread. Chill for few minutes and serve. At the time you serve, go for wedge cut (use a sharp knife for a neat cut). I am sure you would love it as it takes very less time.
Black Bean Salad
Â1/2 can black beans drained, 1 can whole kernel corn drained, 4 finely chopped spring onions. Â1/2 cup finely chopped onions, Â1/2 chopped green bell peppers. 3 diced tomatoes. Â1/2 avocado diced and pricked (peeled off), Â1/2 jar pimentos, 2 tbsp lemon juice, 3 spoons of Italian salad dressing, garlic and salt according to taste. Mix together Italian dressing, black beans, spring onions, corn, bell peppers, avocado, pimentos, tomatoes, and lemon juice in a bowl. Add salt, pepper and garlic goes for toss. Refrigerate it for a while. Enough serving, for three people.
